Lebanese Tabooley

Ingredients
3/4 | Cup | Bulgar | |
2 | - | Lg. Bunches | Parsley (Curly) |
1 | - | Lg. Bunch | Green Onions |
3 | - | Large | Tomatoes (Ripe) |
1 | - | tsp | Salt |
- | 1/4 | tsp | Cinnamon |
- | - | - | Black Pepper (To Taste) |
- | 1/2 | Cup | Extra Virgin Olive Oil |
- | 2/3 | Cup | Lemon Juice (Freshly Squeezed) |
Instructions
A) Soak bulgar in water for 20 minutes. Drain in strainer.
B) Mix bulgar, tomoatoes, green onions, and parsley in large bowl.
C) Mix lemon juice with salt, pepper, cinnamon. Add olive oil and whisk until the oil is suspended.
D) Pour over the bulgar mixture and mix well.
E) Allow to marinate overnight in the refrigerator.
Background: Theo found this recipe years ago that closely matches the tabooley at Emily's Lebanese Delicatessan, a long-time favorite in Northeast Minneapolis.
